Honey

The Haute-Saône, with its varied landscapes, is ideal for beekeeping. More than thirty passionate beekeepers raise their bees here, taking advantage of an environment of meadows and forests.

This natural mosaic encourages the bees to flourish and produces honeys with a unique flavour. Local producers invite you to discover their trade. Visit a bee farm and sample the diversity of products from the hive. From spring honey to fir tree honey, from acacia to lime, each variety reflects the special characteristics of the Haute-Saône region.

As well as honey, some producers produce a wide range of specialities: mead, candles, propolis, and even delicacies such as gingerbread and sweets.

Maison laGrange in Marnay invites you on a unique sensory journey. Vincent Ballot, the first Frenchman to be awarded the title of Meilleur Ouvrier de France Torréfacteur, has been making coffees from all over the world sublime for 25 years. Let yourself be tempted by Ethiopia, the cradle of coffee, with its floral notes and subtle sweetness. Or perhaps you’d prefer the “volcano honey”, with its sweet accents, picked on the volcanic slopes of El Salvador.

Don’t miss the ‘Cinq’, a blend specially created by Vincent Ballot for the MOF competition. This daring creation combines four coffees from four continents, each fermented and roasted separately to create a perfect harmony.

La Brûlerie Doillon

Hidden in the back streets of Luxeuil-les-Bains is a gourmet haunt where coffee becomes a real passion. Equipped with a Phoenix roaster, Mr Doillon transforms the art of roasting into a symphony of flavours. The Brûlerie Doillon produces nine varieties of exceptional Arabica, available in the two shops in Luxeuil and Vesoul. Their subtle “monk’s robe” roasting method sublimates each bean. The establishment also offers a refined selection of Dammann Frères teas, French wines, local beers and gourmet delights.

Somewhere Coffee

There’s a coffee nugget hiding in Montot: Somewhere Coffee. Ophélie, a passionate coffee roaster, makes exceptional coffees that will delight the taste buds of coffee lovers and novices alike. What sets Somewhere Coffee apart is its commitment to excellence. Each bean is meticulously selected and roasted by hand, in compliance with the strict standards of the Specialty Coffee Association. Ophélie invites visitors to plunge into a captivating aromatic universe. In her cosy workshop, she enthusiastically shares her knowledge of the art of coffee, from cherry to cup. It’s a chance to discover the subtleties of coffee and the roasting techniques that bring out the best in each variety.

The cheese

Haute-Saône has a wealth of cheese-making expertise: from IGP cancoillotte to IGP Gruyère, not forgetting the distinctive Munster PDO, each cheese tells its own story, which we’d like you to discover on a dedicated page. And this diversity extends far beyond traditional cheeses. In fact, you’ll find many farms dedicated to goat’s cheese. These passionate producers produce a wide range of cheeses, from faisselles to mature tommes, as well as unique specialities. The farms, which are often family-run and committed to sustainable agriculture, offer an authentic insight into local know-how. Visit their farms or meet them at the markets to sample their products!

Condiments & aromatic plants

Haute-Saône is bursting with enthusiasts who make the most of the local natural riches. Among them are growers and gatherers of herbs and wild plants, who carefully transform these plant wonders into unique products.

Initiatives such as Jardins Nomades, in transition to organic farming, and Saperli’cueillette, with its “SIMPLES” label, illustrate the region’s commitment to environmentally-friendly production. These artisans of the land use agroforestry methods and carefully harvest wild plants, thus preserving local biodiversity.

Their varied range includes herbs, medicinal plants and artisanal creations, all produced with respect for natural cycles.

Jean de Velas

In Vitrey-sur-Mance, a little corner of culinary paradise is opening up. Jean-Marie San Martin, a former disciple of Paul Bocuse, planted the roots of his Jean de Velas brand here in 2016. This Michelin-starred chef has swapped the stoves of the great kitchens for a laboratory in the middle of a lush orchard and fragrant lavender fields. Here, nature dictates the flavours.

Vinegars, vinaigrettes and spreads are the result of an alchemy between orchard fruit and aromatic herbs grown on site.
