Angélique Della-Torre has been rearing around sixty Alpine goats organically since 2008.
They are fed on the farm or with cereals grown nearby, are not pushed into intensive production and remain on the farm until they die.
Angélique uses their milk to make crottins, palets, pyramides cendrées, bûches, tommes, cœurs gourmands (honey and fig), fromage blanc and faisselle.
The cheeses are sold fresh or matured.
