Description
Angélique Della-Torre has been rearing around sixty Alpine goats organically since 2008.
They are fed on forage, hay and alfalfa produced on the farm or in the surrounding area, as well as cereals; they are not subjected to intensive farming practices and remain on the farm until they die of natural causes.
Using their milk, Angélique produces ‘crottins’, ‘palets’, ‘pyramides cendrées’, ‘bûches’, ‘tommes’, ‘cœurs gourmands’ (honey and fig) and ‘faisselle’.
The cheeses are sold fresh or matured.
